2 cups cooked chicken, shredded (rotisserie chicken works great)

2 medium zucchini, spiralized into zoodles

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons lemon juice

1 teaspoon Dijon mustard

Salt and pepper to taste

Optional: 1 avocado, diced, for added creaminess

Prepare Zoodles: Spiralize the zucchini using a spiralizer. If you don't have one, you can use a vegetable peeler to create thin ribbons.

    Prep Chicken: If you haven't done so already, shred the cooked chicken and set aside.

      Create Dressing: In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper until well combined. Adjust seasoning to taste.

        Combine Ingredients: In a large mixing bowl, add the zoodles, shredded chicken, cherry tomatoes, cucumber, red onion, feta cheese, and parsley. If you're using avocado, gently fold that in as well.

          Dress the Salad: Pour the dressing over the salad mixture and gently toss everything together until the zoodles and chicken are well coated.
