Cold Southwest Chicken Pasta Salad

2 cups rotini pasta

2 cups cooked chicken breast, shredded (about 2-3 chicken breasts)

1 cup cherry tomatoes, halved

1 cup black beans, drained and rinsed

1 cup corn (fresh, canned, or frozen)

1 small red bell pepper, diced

1 small green bell pepper, diced

1/2 cup red onion, finely chopped

1 avocado, diced

1/4 cup fresh cilantro, chopped

1/2 cup shredded cheddar cheese

1/4 cup olive oil

2 tablespoons lime juice

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Cook Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package directions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare Chicken: If not already done, cook the chicken breasts by boiling or grilling them until fully cooked. Let cool slightly, then shred into bite-sized pieces.

      Combine Ingredients: In a large bowl, combine the cooked pasta, shredded chicken, cherry tomatoes, black beans, corn, red bell pepper, green bell pepper, red onion, and cilantro. Toss gently to combine all ingredients.

        Make Dressing: In a small bowl or jar, whisk together the olive oil, lime juice, chili powder, cumin, salt, and pepper until well combined.
