8 oz (225g) spaghetti

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell pepper, finely chopped (any color)

1 cup black olives, sliced

1/2 cup red onion, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh basil, chopped

1/4 cup fresh parsley, chopped

1/3 cup olive oil

2 tbsp red wine vinegar

1 tbsp Dijon mustard

1 clove garlic, minced

Salt and pepper to taste

8 small cups or bowls for serving

Instructions
 

Cook the Spaghetti: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Allow it to cool completely.

    Prepare the Salad Components: While the spaghetti is cooling, in a large mixing bowl, combine the cherry tomatoes, cucumber, bell pepper, black olives, red onion, feta cheese, fresh basil, and parsley.

      Make the Dressing: In a separate bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined.

        Combine Everything: Add the cooled spaghetti to the bowl with the vegetables and cheeses. Drizzle the dressing over the top and gently toss until everything is evenly coated.

          Chill: Cover the salad with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
