Ingredients

For the Hot Dogs:

4 hot dog sausages (beef or pork)

4 hot dog buns

1 cup coleslaw (store-bought or homemade)

1 ripe avocado, sliced

½ cup crushed potato chips (for topping)

¼ cup mayonnaise

1 tablespoon ketchup

1 tablespoon mustard

1 tablespoon fresh lime juice

Salt and pepper to taste

For the Caramelized Pineapple:

1 medium ripe pineapple, peeled and sliced into rings

2 tablespoons brown sugar

1 tablespoon unsalted butter

1 teaspoon cinnamon

Pinch of salt

Instructions

Prepare the Caramelized Pineapple:

    - In a large skillet, melt the butter over medium heat. Add the brown sugar, cinnamon, and a pinch of salt, stirring until the mixture is smooth and bubbling.

      - Add the pineapple rings to the skillet. Cook for about 3-4 minutes on each side, until they are golden brown and caramelized. Remove from heat and set aside.

        Cook the Hot Dogs:

          - While the pineapple is caramelizing, preheat a grill or stovetop grill pan over medium-high heat.

            - Grill the sausages for about 5-7 minutes, turning occasionally until they are fully cooked and have nice grill marks.

              Prepare the Toppings:

                - In a small bowl, mix the mayonnaise, ketchup, mustard, and lime juice together. Season with salt and pepper to taste. This will be your sauce for the hot dogs.

                  Assemble the Hot Dogs:

                    - In each hot dog bun, place a grilled sausage. Top it generously with coleslaw, avocado slices, and a few pieces of the caramelized pineapple. Drizzle the sauce over the top and sprinkle with crushed potato chips for an added crunch.

                      Serve:

                        - Serve the hot dogs immediately, garnished with extra lime wedges and your favorite hot sauce if desired.
