1 lb (450g) boneless, skinless chicken thighs, diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) pinto beans, drained and rinsed

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (14.5 oz) diced tomatoes with green chilies

1 cup low-sodium chicken broth

2 tbsp olive oil

1 tbsp chili powder

1 tsp ground cumin

½ tsp smoked paprika

½ tsp salt (to taste)

¼ tsp black pepper

1 lime, juiced

Fresh cilantro, for garnish

Optional toppings: diced avocado, shredded cheese, sour cream

Instructions
 

Heat the Oil: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 5 minutes until softened.

    Cook the Chicken: Add the diced chicken thighs to the pot. Cook for 6-8 minutes, stirring occasionally, until the chicken is browned on all sides.

      Add Garlic and Spices: Stir in the minced garlic, chili powder, cumin, smoked paprika, salt, and pepper. Cook for an additional minute until the spices are fragrant.

        Incorporate Beans and Tomatoes: Pour in the diced tomatoes (with their juices), black beans, pinto beans, and chicken broth. Stir well to combine.
