4 large whole wheat tortillas

8 oz (225g) cream cheese, softened (regular or low-fat)

1 cup baby spinach leaves, washed and dried

1 medium carrot, grated

1 medium cucumber, thinly sliced

1 bell pepper (any color), thinly sliced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1 tbsp lemon juice

Salt and pepper, to taste

Prepare the Cream Cheese Spread: In a medium bowl, combine the softened cream cheese, lemon juice, salt, and pepper. Mix until smooth and creamy.

    Assemble the Tortillas: Lay one whole wheat tortilla flat on a clean surface. Spread a generous layer of the cream cheese mixture evenly across the entire surface of the tortilla.

      Add the Veggies: On one side of the tortilla, layer the baby spinach leaves, grated carrot, cucumber slices, bell pepper strips, red onion, and chopped parsley in a line, leaving a small margin at the edges.

        Roll-Up: Starting from the side with the veggie layer, carefully roll the tortilla tightly until you reach the edge. Ensure that the fillings stay tucked in as you roll. Repeat this for each tortilla.
