8 large whole wheat tortillas

16 oz cream cheese, softened

1 cup fresh spinach leaves, chopped

1 cup bell peppers, finely diced (mix of red, yellow, and orange for color)

1 cup shredded carrots

1/2 cup cucumber, thinly sliced

1/4 cup fresh chives, chopped

Salt and pepper to taste

1 tsp garlic powder

1 tsp onion powder

Optional: 1/2 tsp cayenne pepper for a kick

Prepare the Cream Cheese Mixture: In a large mixing bowl, combine the softened cream cheese, chopped spinach, diced bell peppers, shredded carrots, sliced cucumber, chopped chives, garlic powder, onion powder, salt, and pepper. If you like it spicy, add the cayenne pepper. Mix well until all ingredients are fully incorporated.

    Assemble the Roll-Ups: Lay a tortilla flat on a clean surface. Spread a generous layer (about 1/3 cup) of the cream cheese mixture evenly over the tortilla, leaving about 1 inch around the edges for easy rolling.

      Roll It Up: Starting from one end, tightly roll the tortilla over the filling, tucking in the sides as you go to keep everything inside. Place the seam side down on a cutting board.

        Slice and Serve: Repeat the process with the remaining tortillas and filling. Once all are rolled, slice each roll-up into bite-sized pieces (about 1-2 inches thick). Arrange on a platter.
