2 cups all-purpose flour (plus extra for dusting)

1/2 teaspoon baking powder

1/2 teaspoon salt

1 tablespoon olive oil

1 tablespoon fresh herbs (like dill or chives, chopped)

Water (if needed, to adjust dough consistency)

Butter or ghee (for cooking)

Mix the Dry Ingredients: In a large mixing bowl, combine 2 cups of all-purpose flour, baking powder, garlic powder (if using), and salt. Whisk together until well blended.

    Combine Wet Ingredients: In another bowl, mix the drained cottage cheese, olive oil, and fresh herbs. Use a fork to blend until smooth.

      Form the Dough: Gradually add the cottage cheese mixture to the dry ingredients, stirring with a spoon until a shaggy dough forms. If the mixture is too dry, add a little water, one tablespoon at a time, until the dough is pliable but not sticky.

        Knead the Dough: Transfer the dough onto a floured surface. Knead gently for about 3-4 minutes, just until everything is combined and the dough is smooth.

          Rest the Dough: Cover the dough with a clean kitchen towel or plastic wrap and let it rest for about 15 minutes. This makes it easier to roll out.

            Shape the Flatbreads: Divide the dough into equal portions (about 6-8). Roll each piece into a ball, then use a rolling pin to flatten each ball into a round flatbread that is about 1/4-inch thick.

              Cook the Flatbreads: Heat a non-stick skillet or griddle over medium-high heat. Add a small amount of butter or ghee. Once melted, place a flatbread in the skillet. Cook for 2-3 minutes on one side, until golden brown and bubbly, then flip and cook for another 1-2 minutes. Repeat for the remaining flatbreads.
