1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, rinsed and drained

1 red bell pepper, diced

1 green bell pepper, diced

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

1 avocado, diced

1 jalapeño, seeded and minced (optional for heat)

1/4 cup fresh cilantro, chopped

1 lime, juiced

3 tablespoons olive oil

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Prepare the Ingredients: Begin by rinsing and draining the black beans and corn. Dice the red and green bell peppers, finely chop the red onion, halve the cherry tomatoes, and dice the avocado. If using, seed and mince the jalapeño. Chop the cilantro as well.

    Mix the Base: In a large mixing bowl, combine the black beans, corn, diced red bell pepper, diced green bell pepper, chopped red onion, halved cherry tomatoes, and minced jalapeño (if using).

      Add the Avocado: Gently fold in the diced avocado to the mixture, being careful not to mash it.

        Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper until well combined.
