1 cup wild rice, rinsed

3 cups water or vegetable broth

1 apple (preferably a crisp variety like Honeycrisp or Fuji), diced

1 cup fresh or dried cranberries

1/2 cup pecans or walnuts, chopped

1/2 cup celery, finely chopped

1/4 cup red onion, finely diced

1/4 cup feta cheese, crumbled (optional)

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

Dressing:

1/4 cup olive oil

2 tablespoons apple cider vinegar

1 tablespoon maple syrup (optional for a sweet touch)

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

Salt and pepper, to taste

Instructions
 

Cook the Wild Rice: In a medium saucepan, combine the rinsed wild rice with water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 45-50 minutes, or until the rice is tender and the grains have burst open. Drain any excess liquid and fluff with a fork. Allow to cool.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, maple syrup (if using), Dijon mustard, garlic powder, and a pinch of salt and pepper until well combined. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, combine the cooked wild rice, diced apple, cranberries, chopped pecans or walnuts, celery, red onion, and parsley. If using, add the crumbled feta cheese for an extra layer of flavor.
