1 ¾ cups all-purpose flour

1 cup fresh or frozen cranberries, roughly chopped

¾ cup granulated sugar

½ cup orange juice (freshly squeezed preferred)

¼ cup unsalted butter, melted

1 large egg

1 tablespoon orange zest (from about 1 orange)

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ teaspoon ground cinnamon (optional)

¼ cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and ground cinnamon (if using) until well combined.

      Prepare Wet Ingredients: In a separate bowl, whisk together the melted butter, orange juice, egg, and orange zest until smooth and well blended.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold the mixture until just combined; do not overmix.

          Add Cranberries and Nuts: Gently fold in the chopped cranberries and nuts (if using). The batter will be thick and slightly lumpy, which is normal.

            Fill Muffin Tins: Evenly distribute the batter into the prepared muffin tins, filling each cup about ¾ full.

              Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
