2 ripe avocados, halved and pitted

2 cloves garlic, minced

1/4 cup fresh basil leaves

2 tablespoons lemon juice

1/4 cup extra-virgin olive oil

1/4 cup grated Parmesan cheese (plus more for garnishing)

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional for a bit of heat)

Cherry tomatoes, halved (for topping)

Pine nuts or walnuts, toasted (for garnish)

Instructions
 

Cook the Pasta: Begin by boiling a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water before draining. Set the pasta aside.

    Prepare the Avocado Sauce: In a blender or food processor, combine the ripe avocados, minced garlic, fresh basil, lemon juice, and olive oil. Blend until smooth and creamy.

      Mix in Cheese and Season: Add the grated Parmesan cheese to the avocado mixture and blend until combined. If the sauce is too thick, gradually add some reserved pasta water until it reaches your desired consistency. Season with salt, pepper, and red pepper flakes (if using).
