Creamy Avocado Pasta Salad

8 oz (about 2 cups) small pasta (shells or fusilli work well)

2 ripe avocados, halved and pitted

1/4 cup Greek yogurt (or sour cream for a richer flavor)

1 tablespoon lemon juice

1 tablespoon olive oil

1 garlic clove, minced

1 cup cherry tomatoes, halved

1/2 cup corn (fresh, canned, or frozen)

1/4 cup red onion, finely chopped

1/2 cup bell pepper (any color), diced

1/4 cup fresh cilantro or parsley, chopped

Salt and pepper, to taste

Optional: Crushed red pepper flakes for a kick

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Avocado Dressing: In a bowl, scoop out the avocado flesh and add it to a blender or food processor. Add Greek yogurt, lemon juice, olive oil, minced garlic, salt, and pepper. Blend until smooth and creamy. If you prefer a thinner consistency, add a little more lemon juice or olive oil.

      Combine Ingredients: In a large mixing bowl, combine the cooked pasta, cherry tomatoes, corn, red onion, bell pepper, and fresh herbs. Pour the avocado dressing over the top.
