1 ripe avocado, peeled and pitted

1 can (5 oz) tuna in water, drained

2 tablespoons plain Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

Salt and pepper to taste

1/4 cup finely chopped red onion

1/4 cup diced cucumber

1/4 cup sweet corn (canned or cooked)

2 whole wheat tortillas or wraps

Handful of fresh spinach or mixed greens

Optional: sliced radishes and black olives for garnish

Instructions
 

In a medium bowl, mash the avocado with a fork until smooth.

    Stir in the drained tuna, Greek yogurt, Dijon mustard, and lemon juice. Mix until well combined and creamy.

      Season the mixture with salt and pepper to taste.

        Fold in the chopped red onion, cucumber, and sweet corn until evenly distributed.

          Lay the whole wheat tortillas flat on a clean surface. Place a handful of fresh spinach or mixed greens in the center of each tortilla.

            Spoon the creamy avocado tuna mixture over the greens, spreading it evenly across the tortillas.

              Optional: Add sliced radishes and black olives on top for extra flavor and crunch.

                Carefully roll the wrap tightly, tucking the ends in as you go to secure the filling.

                  Slice each wrap in half diagonally and plate them.
