4 bone-in pork chops (1-inch thick)

6 strips of crispy bacon, chopped

1 cup heavy cream

1 cup chicken broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon unsalted butter

Fresh parsley, chopped (for garnish)

Prepare the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Using a slotted spoon, transfer the bacon to a paper towel-lined plate, leaving the rendered fat in the skillet.

    Sear the Pork Chops: Increase the heat to medium-high. Season the pork chops with salt and pepper. Add olive oil to the skillet, then sear the pork chops for 4-5 minutes on each side until golden brown. Remove the chops and set aside.

      Sauté the Aromatics: In the same skillet, reduce heat to medium and add butter. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in garlic and cook for an additional minute until fragrant.

        Make the Creamy Sauce: Pour in the chicken broth, scraping up any brown bits from the bottom of the pan. Stir in the heavy cream, thyme, smoked paprika, and the crispy bacon. Let it simmer for 5 minutes until the sauce thickens slightly.
