Creamy Basil Gnocchi with Roasted Tomatoes

1 pound store-bought gnocchi

2 cups cherry tomatoes, halved

2 tablespoons olive oil

Salt and pepper to taste

3 cloves garlic, minced

1 cup heavy cream

1 cup fresh basil leaves, chopped

½ cup grated Parmesan cheese

¼ teaspoon red pepper flakes (optional)

Extra basil leaves for garnish

Freshly ground black pepper for serving

Instructions
 

Preheat your oven to 400°F (200°C).

    On a baking sheet, toss the halved cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out in a single layer and roast in the preheated oven for 20-25 minutes, or until they are blistered and caramelized.

      While the tomatoes are roasting, bring a large pot of salted water to a boil over high heat. Add the gnocchi and cook according to package instructions or until they float to the surface (about 2-3 minutes). Drain and set aside.

        In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

          Reduce the heat to low and pour in the heavy cream. Stir in the chopped basil, grated Parmesan cheese, and red pepper flakes if using. Simmer for around 3-4 minutes until the sauce thickens slightly.

            Add the cooked gnocchi to the creamy basil sauce, tossing gently to combine. If the sauce is too thick, you can add a touch of the reserved gnocchi cooking water to loosen it.

              Once the roasted tomatoes are done, gently fold them into the gnocchi mixture, allowing their juices to enrich the sauce.

                Serve hot, garnishing with extra fresh basil leaves and freshly ground black pepper to taste.
