1 cup orzo pasta

2 cups broccoli florets

2 tablespoons unsalted butter

1 small onion, diced

3 cloves garlic, minced

4 cups vegetable broth

1 cup milk (or heavy cream for extra creaminess)

1 ½ cups sharp cheddar cheese, shredded

½ teaspoon ground black pepper

¼ teaspoon red pepper flakes (optional)

Salt to taste

Fresh parsley, chopped, for garnish

Cook the Orzo: In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. In the last 2 minutes of cooking, add the broccoli florets. Drain and set aside.
