1 cup jasmine rice (or any rice of your choice)

2 cups vegetable broth (or water)

2 cups broccoli florets

4 cloves garlic, minced

1 cup heavy cream (or coconut milk for a vegan option)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon red pepper flakes (optional for heat)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Rice: In a medium saucepan, combine jasmine rice and vegetable broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and broth has been absorbed. Remove from heat and let it sit covered for an additional 5 minutes, then fluff with a fork.

    Blanch the Broccoli: While the rice is cooking, bring a small pot of water to a boil. Add the broccoli florets and blanch for 2-3 minutes until bright green and tender-crisp. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, drain again and set aside.

      Prepare the Cream Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant, being careful not to burn it.

        Add Cream and Cheese: Pour in the heavy cream (or coconut milk) and bring to a gentle simmer. Stir in the grated Parmesan cheese (or nutritional yeast) until melted and the sauce is smooth. Season with salt, pepper, and red pepper flakes if using.
