Creamy Cajun Pasta with Turkey

12 oz (340g) fettuccine or penne pasta

1 lb (450g) ground turkey

2 tbsp Cajun seasoning

1 tbsp olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 cup heavy cream

1 cup chicken broth

1 cup shredded Parmesan cheese

1 cup spinach, roughly chopped

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta:

    In a large pot, bring salted water to a boil. Add the fettuccine or penne and cook according to package instructions until al dente. Drain and set aside.

      Sauté Turkey:

        In a large skillet over medium heat, add olive oil. Once hot, add the ground turkey, season with Cajun seasoning, salt, and pepper. Cook for about 5-7 minutes, breaking up the meat with a wooden spoon until browned and cooked through. Remove the turkey from the skillet and set aside.

          Sauté Vegetables:

            In the same skillet, add the diced onion and red bell pepper. Sauté for about 3-4 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute until fragrant.

              Make the Sauce:

                Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer and let it cook for about 3-5 minutes until slightly thickened.

                  Add Cheese and Spinach:

                    Reduce the heat to low and stir in the shredded Parmesan cheese until melted and smooth. Add the chopped spinach and cooked turkey back into the skillet, stirring until the spinach wilts.

                      Combine Pasta and Sauce:

                        Add the drained pasta to the skillet with the creamy sauce. Toss everything together to ensure the pasta is well coated with the sauce. Adjust seasoning with more Cajun spices, salt, or pepper if needed.

                          Serve:
