1 large ripe cantaloupe, peeled, seeded, and cubed

1 cup cucumber, peeled and diced

1/2 cup Greek yogurt

1/4 cup fresh mint leaves, plus extra for garnish

2 tablespoons lime juice

1 tablespoon honey (optional, depending on sweetness preference)

1 clove garlic, minced

Salt and pepper, to taste

1 small red bell pepper, diced (for garnish)

Prepare the Ingredients: Start by peeling, seeding, and cubing the cantaloupe. Peel and dice the cucumber. Mince the garlic and chop the mint leaves.

    Blend the Gazpacho: In a blender, combine the cubed cantaloupe, diced cucumber, Greek yogurt, mint leaves, lime juice, honey (if using), and minced garlic. Blend until the mixture is completely smooth and creamy.
