Ingredients

8 oz (about 2 cups) of pasta (preferably rotini or fusilli)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

½ cup fresh basil leaves, roughly chopped

¼ cup grated Parmesan cheese

½ cup heavy cream

2 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

1 clove garlic, minced

Salt and pepper to taste

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Sauce: In a medium bowl, whisk together the heavy cream, olive oil, balsamic vinegar, minced garlic, grated Parmesan, salt, and pepper until smooth and well combined.

Combine Ingredients: In a large mixing bowl, add the cooled pasta, halved cherry tomatoes, mozzarella balls, chopped basil, and the creamy dressing. Gently toss everything together until the pasta is evenly coated with the sauce.

Chill and Serve: Cover and refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld. Before serving, taste and adjust seasoning if needed.

Garnish: Serve chilled or at room temperature, garnished with additional basil leaves and a drizzle of balsamic reduction if desired. Enjoy!
