1 large head of cauliflower, cut into florets

2 cups sharp cheddar cheese, grated

1 cup cream cheese, softened

1 cup whole milk

2 tablespoons butter

2 tablespoons all-purpose flour

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup breadcrumbs (optional for topping)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 5-7 minutes until slightly tender. Drain and set aside.

      Make the Cheese Sauce: In a large skillet, melt the butter over medium heat. Once melted, add the flour, stirring continuously for about 2 minutes to create a roux. Gradually whisk in the milk, ensuring there are no lumps, and continue to cook until the mixture thickens, around 5 minutes.

        Add Cheese: Lower the heat and stir in the cream cheese until melted and smooth. Then, fold in the grated cheddar cheese, Dijon mustard, garlic powder, onion powder, and season with salt and pepper. Stir until all ingredients are fully combined and creamy.
