1 medium onion, finely chopped

2 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 cup potatoes, peeled and diced

4 cups chicken or vegetable broth

1 teaspoon dried thyme

1 bay leaf

1 tablespoon Dijon mustard

1 cup heavy cream

1 cup assorted charcuterie meats (e.g., salami, prosciutto, and chorizo), chopped

1 cup assorted cheeses (e.g., Gruyère, cheddar, and blue cheese), shredded

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Sauté the Base: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.

    Add Vegetables: Stir in the diced carrots and celery. Cook for an additional 5 minutes until the vegetables start to soften.

      Incorporate Potatoes: Add the diced potatoes, chicken or vegetable broth, thyme, and bay leaf. Bring the mixture to a boil, then reduce to a simmer. Cover and let it cook for about 15-20 minutes or until the potatoes are tender.

        Creamy Blend: Once the potatoes are cooked, remove the bay leaf. Use an immersion blender to puree the soup until smooth and creamy. Alternatively, transfer to a blender in batches (be cautious with hot liquid) and blend until creamy.

          Add Flavors: Return the blended soup to the pot and stir in the Dijon mustard and heavy cream. Season with salt and pepper to taste.
