Creamy Chicken and Broccoli Rice Skillet

2 cups broccoli florets

1 lb boneless, skinless chicken breasts, cubed

1 cup uncooked white rice

2 ½ cups chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prep Ingredients: Wash and cut the broccoli into florets. Cube the chicken breasts into bite-sized pieces and set aside.

    Cook Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the cubed chicken. Season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and cook for 3-4 minutes until softened. Add minced garlic and cook for an additional minute until fragrant.

        Add Rice: Stir in the uncooked rice and mix well. Toast the rice for about 2 minutes, stirring constantly.

          Combine Ingredients: Pour in the chicken broth, scraping up any brown bits from the bottom of the skillet. Bring to a boil, then reduce the heat to low. Stir in the broccoli florets and return the chicken to the skillet.

            Simmer: Cover the skillet and let it simmer for 15-20 minutes, or until the rice is tender and has absorbed most of the moisture.

              Make it Creamy: Once the rice is cooked, add heavy cream and half of the cheddar cheese. Stir until everything is well combined and creamy.

                Melt Cheese: Sprinkle the remaining cheddar cheese on top, cover the skillet, and let it sit on low heat for an additional 5 minutes, until the cheese is melted.

                  Garnish & Serve: Remove from heat. Garnish with chopped fresh parsley before serving.
