Ingredients

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 cups mushrooms, sliced (cremini or button mushrooms)

1 medium onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup fresh spinach

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried Italian seasoning

Salt and pepper to taste

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, season with salt, pepper, thyme, and Italian seasoning, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Cook the Aromatics: In the same skillet, add the diced onion and sliced mushrooms. Sauté for about 5 minutes until the onions are translucent and the mushrooms have released their moisture and browned.

Add Garlic: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Make the Cream Sauce: Pour in the chicken broth, scraping the bottom of the skillet to release any flavorful bits. Bring to a simmer and let it reduce slightly, about 3-4 minutes.

Add Cream and Spinach: Lower the heat and stir in the heavy cream. Then add the fresh spinach, and let it wilt down in the sauce for about 2-3 minutes.

Combine Everything: Return the cooked chicken to the skillet and mix well, allowing the chicken to warm through in the sauce. Stir in the grated Parmesan cheese until combined and creamy.

Taste and Adjust: Taste the sauce and adjust seasoning with more salt and pepper if needed. If it's too thick, you can add a little more chicken broth to reach the desired consistency.

Serve: Garnish with chopped fresh parsley and serve hot. This dish pairs wonderfully with rice, pasta, or a side of crusty bread to soak up the delicious sauce.
