12 oz (340g) penne pasta

1 tablespoon olive oil

1 pound (450g) boneless, skinless chicken breasts, diced

3 cloves garlic, minced

1 medium onion, chopped

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 teaspoon red pepper flakes (optional)

4 cups fresh spinach, roughly chopped

1 cup (240ml) heavy cream

1 cup (240ml) chicken broth

1 cup (100g) grated Parmesan cheese, plus extra for topping

1 cup (100g) shredded mozzarella cheese

Salt and pepper to taste

Fresh parsley for garnish (optional)

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Pasta: In a large pot, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Sauté Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned on all sides, about 5-7 minutes.

        Add Aromatics: Stir in the minced garlic and chopped onion, cooking until the onion is translucent and fragrant, about 2-3 minutes.

          Season: Mix in the dried Italian herbs and red pepper flakes (if using), followed by the chopped spinach. Cook until the spinach wilts down, about 3-4 minutes.
