Creamy Chicken and Spinach Pasta Bake

8 oz (225 g) penne pasta

2 cups cooked chicken, shredded or diced

2 cups fresh spinach, roughly chopped

1 cup ricotta cheese

1 cup cream cheese, softened

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 tsp onion powder

1 tsp Italian seasoning

Salt and pepper to taste

1/2 cup chicken broth

1/2 cup unsweetened almond milk (or regular milk)

Olive oil for greasing

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to the package instructions until al dente. Drain and set aside.

      Prepare the Sauce: In a large mixing bowl, combine the ricotta cheese, cream cheese, and half of the mozzarella cheese. Mix in the minced garlic, onion powder, Italian seasoning, salt, pepper, chicken broth, and almond milk until smooth.

        Combine Ingredients: Add the cooked chicken, chopped spinach, and drained penne pasta to the cheese mixture. Stir until all ingredients are well coated with the sauce.

          Assemble the Bake: Grease a 9x13-inch baking dish with olive oil. Transfer the pasta mixture into the prepared dish, spreading it evenly. Top with the remaining mozzarella cheese and the grated Parmesan cheese.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Once baked, remove from the oven and let it cool slightly before serving. Garnish with fresh basil leaves, if desired.
