300g (10.5 oz) penne pasta

2 tablespoons olive oil

500g (1 lb) boneless, skinless chicken breast, diced

4 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

150g (5 oz) fresh spinach leaves

250ml (1 cup) heavy cream

100g (3.5 oz) cream cheese, softened

50g (1.5 oz) grated Parmesan cheese

Zest and juice of 1 lemon

Fresh parsley, chopped for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the rest. Set aside.

    Sauté the Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the diced chicken and season with salt, pepper, and Italian seasoning. Cook for about 6-8 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Cook Garlic and Spinach: In the same skillet, add the minced garlic and cook for 30 seconds until fragrant. Add the spinach and cook until wilted, about 2-3 minutes.

        Create the Sauce: Lower the heat to medium. Pour in the heavy cream and add the softened cream cheese. Stir until the cream cheese is fully melted and combined with the heavy cream, creating a creamy sauce. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.

          Combine Ingredients: Return the cooked chicken to the skillet and stir in the drained penne pasta. Mix well to coat everything in the creamy sauce. Add the grated Parmesan cheese, lemon zest, and lemon juice. Adjust seasoning if needed.

            Serve: Once heated through, remove from heat. Garnish with fresh parsley before serving.
