8 oz (225g) penne pasta

1 lb (450g) boneless, skinless chicken breasts, diced

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, diced

4 cups fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

Salt and pepper to taste

½ cup grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken breast. Season with salt and pepper, and cook for about 6-8 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the diced onion and sauté for 2-3 minutes until translucent. Add the minced garlic and sauté for another minute, being careful not to burn it.

        Cook the Spinach and Tomatoes: Add the chopped spinach and halved cherry tomatoes to the skillet. Cook for about 3-4 minutes, stirring frequently until the spinach is wilted and the tomatoes are slightly softened.

          Make the Sauce: Pour in the chicken broth and heavy cream into the skillet. Add the Italian seasoning and stir well to combine. Bring to a gentle simmer and let it cook for about 2-3 minutes, allowing the sauce to thicken slightly.

            Combine: Return the cooked chicken to the skillet, followed by the drained pasta. Toss everything together until the pasta is evenly coated with the creamy sauce. Stir in the grated Parmesan cheese until melted and well incorporated.
