12 oz (340 g) linguine or fettuccine

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

1/4 cup fresh cilantro, chopped (plus more for garnish)

2 tablespoons lime juice (freshly squeezed)

1 teaspoon lime zest

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon salt (to taste)

1/2 teaspoon black pepper (to taste)

Optional: sliced cherry tomatoes and avocado for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine or fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Prepare the Sauce: In a large skillet over medium heat, add the olive oil. Once hot, sauté the minced garlic for about 1 minute until fragrant but not browned.

      Make it Creamy: Reduce the heat to low and pour in the heavy cream. Stir in the grated Parmesan cheese, lime juice, and lime zest. Mix continuously until the cheese melts and the sauce becomes creamy.
