2 medium zucchinis, diced

2 cups fresh corn kernels (about 4 ears of corn) or frozen corn

1 medium onion, chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream or coconut milk for a vegan option

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh basil or chives, for garnish

Prepare the Veggies: Start by washing and dicing the zucchinis and chopping the onion. If using fresh corn, shuck the corn and cut the kernels off the cobs.

    Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Then, stir in the minced garlic and cook for another minute until fragrant.

      Add Zucchini and Corn: Stir in the diced zucchini and corn kernels, cooking for about 5-7 minutes. The zucchini should be slightly tender but still firm.

        Season the Soup: Sprinkle in the thyme, smoked paprika, salt, and pepper. Mix well to combine all the flavors.
