Ingredients

1 pound boneless, skinless chicken breasts

4 cups chicken broth

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1 cup cream cheese, softened

1 cup heavy cream

2 cups egg noodles

1 cup cooked bacon, crumbled

1/2 cup shredded cheddar cheese (optional)

Fresh parsley, chopped for garnish

Salt to taste

Instructions

Cook the Chicken: In a large pot, add the chicken breasts and cover with chicken broth. Bring to a boil, then reduce heat and let simmer for about 15-20 minutes or until the chicken is cooked through. Remove the chicken, shred it, and set aside.

Sauté Vegetables: In the same pot, add the diced onion, garlic, carrots, and celery. Sauté over medium heat for about 5-7 minutes until the vegetables are soft and fragrant.

Combine Seasonings: Add dried thyme, smoked paprika, and black pepper to the sautéed vegetables. Stir to combine and enhance the flavors.

Add the Broth and Noodles: Pour in the remaining chicken broth and bring to a gentle simmer. Stir in the egg noodles and let cook for the time specified on the package, usually around 5-7 minutes.

Creamy Base: Once the noodles are cooked, reduce the heat to low. Add the softened cream cheese and stir until melted and combined.

Finish the Soup: Pour in the heavy cream and stir well. Add the shredded chicken back into the pot and mix everything together. If desired, stir in the crumbled bacon and shredded cheddar cheese for extra flavor.

Final Seasoning: Taste the soup and add salt if necessary. Let everything simmer together for another 2-3 minutes until heated through.

Serve: Ladle the creamy crack chicken noodle soup into bowls and garnish with fresh chopped parsley, additional bacon, or cheese if desired. Enjoy!
