Creamy Dill Potato Salad

2 pounds baby potatoes, halved

1 cup mayonnaise

1/2 cup sour cream

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1/4 cup fresh dill, chopped (plus extra for garnish)

1/2 teaspoon salt (more to taste)

1/4 teaspoon black pepper

1 cup celery, finely chopped

1/2 cup red onion, finely chopped

1/2 cup hard-boiled eggs, chopped (optional)

Instructions
 

Boil the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 15-20 minutes until tender but still firm. Make sure not to overcook. Drain and set aside to cool.

    Prepare the Dressing: In a large mixing bowl, whisk together mayonnaise, sour cream, Dijon mustard, apple cider vinegar, garlic powder, onion powder, chopped dill, salt, and black pepper until smooth.

      Combine Ingredients: Once the potatoes have cooled to room temperature, gently fold them into the bowl with the dressing. Add the chopped celery, red onion, and hard-boiled eggs if using. Mix until all the potatoes are well coated with the dressing.

        Taste and Adjust: Taste the potato salad and adjust salt and pepper as necessary. If you’d like more dill flavor, feel free to add additional chopped dill.

          Chill: Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.

            Serve: Before serving, give the salad a gentle stir. Garnish with extra dill on top for presentation. Enjoy!
