1 clove garlic, minced

1 small bunch of fresh basil leaves, roughly chopped

Juice of 1 lime

Salt and pepper to taste

Olive oil for drizzling

Optional: Toasted pumpkin seeds for garnish

Instructions

Prepare the Vegetables: In a medium bowl, combine the diced cucumbers, chopped tomatoes, and diced avocados. Toss gently to mix.

Blend the Base: In a blender, add the Greek yogurt, chilled vegetable broth, minced garlic, and chopped basil. Blend until smooth and creamy.

Combine Ingredients: Pour the blended mixture into a large mixing bowl. Add the prepared vegetables to the bowl and fold them gently into the soup base.

Season: Squeeze in the lime juice and season with salt and pepper to taste. Mix well.

Chill: Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld and the soup to chill thoroughly.
