4 salmon fillets (about 6 oz each)

2 tablespoons olive oil

Salt and pepper, to taste

4 tablespoons unsalted butter

5 cloves garlic, minced

1 cup heavy cream

1 teaspoon Dijon mustard

Zest of 1 lemon

Juice of 1 lemon

1 cup baby spinach

¼ cup freshly grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Salmon: Season the salmon fillets with salt and pepper on both sides.

    Sear the Salmon: In a large skillet over medium-high heat, add olive oil. Once hot, carefully place the salmon fillets in the skillet, skin side down. Cook for about 4-5 minutes, until the skin is crispy. Carefully flip the salmon and cook for an additional 2-3 minutes until just cooked through. Remove the salmon from the skillet and set aside on a plate.

      Make the Garlic Butter Sauce: In the same skillet, lower the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant – be careful not to burn it!

        Add Cream and Flavorings: Pour in the heavy cream, stirring well. Add the Dijon mustard, lemon zest, and lemon juice. Mix until combined, then bring the sauce to a gentle simmer.

          Incorporate Spinach and Cheese: Stir in the baby spinach and allow it to wilt for about 2 minutes. Then, add the Parmesan cheese and stir until melted and well combined. Season with more salt and pepper to taste.
