1 cup dried green or brown lentils, rinsed and drained

1 large onion, diced

4 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

6 cups vegetable broth (or water)

1 can (14 oz) coconut milk

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and black pepper to taste

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic, carrots, and celery, cooking for an additional 5 minutes until softened.

    Add the Lentils and Spices: Stir in the rinsed lentils, ground cumin, smoked paprika, and dried thyme. Cook for 2-3 minutes, allowing the spices to become fragrant.

      Pour in the Broth: Add the vegetable broth to the pot. Bring to a boil, then reduce the heat to low and let it simmer uncovered for 25-30 minutes, or until the lentils are tender.
