12 oz fettuccine or your pasta of choice

1 cup pumpkin puree (homemade or canned)

1 cup heavy cream

1 cup grated Parmesan cheese, plus extra for serving

4 cloves garlic, minced

1 medium onion, finely chopped

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon nutmeg (optional)

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Sauce Base: In a large skillet over medium heat, add olive oil. Once hot, sauté the minced garlic and chopped onion until the onion is translucent and the garlic is fragrant, about 3-4 minutes.

      Add Pumpkin and Cream: Stir in the pumpkin puree into the skillet and cook for another 2 minutes. Pour in the heavy cream and whisk until combined. Bring the mixture to a gentle simmer.

        Incorporate Cheese and Seasoning: Gradually add the grated Parmesan cheese, stirring until melted and creamy. Season with dried thyme, salt, black pepper, and nutmeg if using. If the sauce is too thick, add a bit of the reserved pasta water until reaching your desired consistency.
