4 medium zucchinis (zoodles)

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

1 tablespoon fresh parsley, chopped (for garnish)

¼ teaspoon red pepper flakes (optional, for a hint of spice)

Prepare the Zoodles: Using a spiralizer, create zoodles from the zucchinis. If you don’t have a spiralizer, you can use a vegetable peeler to create long thin strips. Set the zoodles aside.

    Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant. Be careful not to burn the garlic.

      Make the Creamy Sauce: Reduce the heat to low. Pour in the heavy cream and stir well. Gradually add the grated Parmesan cheese, whisking until the cheese melts and the sauce becomes creamy. If it’s too thick, add a splash of pasta water or more cream.
