Creamy Lemon Chicken and Rice

1.5 lbs (680g) boneless, skinless chicken thighs

1 cup long-grain rice (jasmine or basmati)

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups low-sodium chicken broth

1 cup heavy cream

1 lemon (zest and juice)

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken thighs with salt, pepper, smoked paprika, and dried thyme. Ensure they are well-coated.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken thighs and sear for 5-7 minutes on each side, until golden brown and cooked through. Remove from the pan and set aside.

      Sauté Aromatics: In the same skillet, melt the butter over medium heat. Add chopped onions and sauté for about 3-4 minutes until they become translucent. Then, add the minced garlic and cook for an additional 1-2 minutes, stirring frequently to avoid burning.

        Cook the Rice: Stir in the rice and cook for 1-2 minutes until slightly toasted. Pour in the chicken broth, lemon zest, and lemon juice. Bring to a gentle boil.
