Creamy Lemon Dill Salmon Pasta

8 oz (225g) spaghetti or linguine

2 tablespoons olive oil

1 lb (450g) salmon fillet, skin removed

Salt and pepper, to taste

2 cloves garlic, minced

Zest of 1 lemon

1 cup heavy cream

1 tablespoon Dijon mustard

Juice of 1 lemon

1/4 cup grated Parmesan cheese

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 cup cherry tomatoes, halved

Fresh dill sprigs, for garnish

Lemon wedges, for serving

Instructions
 

Cook the Pasta:

    Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.

      Prepare the Salmon:

        In a large skillet, heat the olive oil over medium heat. Season the salmon fillet with salt and pepper. Once the oil is hot, add the salmon fillet skin-side down. Cook for about 4-5 minutes without moving it, until a golden crust forms. Flip the salmon and cook for an additional 3-4 minutes, or until cooked through and easily flakes with a fork. Remove the salmon from the skillet and set aside.

          Make the Sauce:

            In the same skillet, reduce the heat to low and add the minced garlic. Sauté for about 30 seconds until fragrant. Stir in the lemon zest, heavy cream, and Dijon mustard, mixing well. Allow the mixture to bubble gently for 2-3 minutes.

              Add Lemon and Cheese:

                Squeeze the juice of one lemon into the sauce, then stir in the grated Parmesan cheese and chopped dill. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency. Season with additional salt and pepper to taste.

                  Combine Everything:

                    Flake the cooked salmon into bite-sized pieces and add it back into the skillet along with the halved cherry tomatoes. Gently toss the sauce and salmon together over low heat until everything is warmed through.

                      Toss Pasta:

                        Add the drained pasta to the skillet and toss until well-coated in the creamy lemon dill sauce. If needed, add more reserved pasta water to help the sauce adhere to the pasta.

                          Serve:

                            Plate the creamy lemon dill salmon pasta and garnish with fresh dill sprigs and lemon wedges. Enjoy warm!
