Creamy Lemon Ricotta Zoodles

4 medium zucchini (zoodles)

1 cup fresh ricotta cheese

1/4 cup grated Parmesan cheese

2 tablespoons lemon juice (freshly squeezed)

Zest of 1 lemon

2 tablespoons extra-virgin olive oil

2 cloves garlic, minced

Salt and pepper to taste

Fresh basil leaves for garnish

1/4 teaspoon red pepper flakes (optional, for a kick)

Prepare the Zoodles: Using a spiralizer, create zoodles from the zucchini. If you don’t have a spiralizer, you can use a vegetable peeler to make thin strips instead. Set aside.

    Make the Creamy Sauce: In a bowl, combine the ricotta cheese, Parmesan cheese, lemon juice, lemon zest, olive oil, garlic, salt, and pepper. Mix until smooth and creamy. If you prefer a thinner consistency, you can add a tablespoon of water or extra olive oil.

      Cook the Zoodles: Heat a skillet over medium heat and add a splash of olive oil. Add the zoodles to the skillet and sauté for 2-3 minutes until just tender, stirring frequently. Be careful not to overcook them; you want to retain some crunch.

        Combine: Once the zoodles are cooked, remove the skillet from heat. Add the creamy ricotta sauce to the zoodles and toss together until the zoodles are well coated. If using, sprinkle in red pepper flakes for an added kick.
