2 cups elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/2 cup breadcrumbs

2 tablespoons grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni al dente according to the package instructions. Drain and set aside.

    Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute to form a roux. Gradually whisk in the milk, ensuring there are no lumps. Continue whisking until the mixture thickens and is smooth, around 3-5 minutes.

      Add Cheeses and Seasonings: Remove from heat and stir in the shredded cheddar and mozzarella cheese, Dijon mustard, garlic powder, onion powder, salt, and pepper. Mix until the cheeses are fully melted and incorporated.

        Combine Pasta and Sauce: Fold the cooked macaroni into the cheese sauce until each piece is well-coated.

          Prepare for Baking: Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or butter. Using a spoon, fill each muffin cup with the creamy mac and cheese mixture, packing it down slightly.
