Creamy Mushroom Barley Stew

1 cup pearl barley

4 cups vegetable broth

2 cups sliced mushrooms (cremini or button)

1 medium onion, diced

2 cloves garlic, minced

1 large carrot, diced

1 cup celery, diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

3 tablespoons olive oil

1 cup heavy cream (or coconut cream for a vegan option)

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Rinse the pearl barley under cold water and set aside.

    In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

      Add the garlic, diced carrot, and celery to the pot, and cook for another 5 minutes, stirring occasionally.

        Stir in the sliced mushrooms and continue cooking until they are golden brown and have released their moisture, about 6-7 minutes.

          Add the rinsed barley, thyme, and rosemary to the pot, mixing everything well.

            Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 30-35 minutes or until the barley is tender.

              Once the barley is cooked, stir in the heavy cream. Season with salt and pepper to taste. Allow the stew to heat through for another 5-10 minutes.

                Remove from heat and ladle the stew into bowls, garnishing with fresh parsley before serving.
