12 ounces of your favorite pasta (penne or fusilli works great)

1 tablespoon olive oil

1 cup cherry tomatoes, halved

1 zucchini, diced

1 yellow bell pepper, diced

1 cup fresh spinach, roughly chopped

2 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil, for garnish (optional)

Instructions
 

Cook the Pasta: In a pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Then, add the diced zucchini and yellow bell pepper. Sauté for about 5 minutes until slightly softened.

      Add Tomatoes and Spinach: Stir in the halved cherry tomatoes and chopped spinach, cooking just until the spinach wilts, about 2 minutes.

        Make the Cream Sauce: Reduce the heat to low and pour in the heavy cream. Sprinkle in the Italian seasoning, and mix well. Allow the cream to simmer for about 3-4 minutes until it thickens slightly.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet along with the Parmesan cheese. Toss everything together, adding reserved pasta water as needed to loosen the sauce. Season with salt and pepper to taste.
