1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

1 cup bell peppers (red, yellow, or green), sliced

1 cup zucchini, sliced

1 cup cherry tomatoes, halved

3 cups spinach leaves, packed

½ cup heavy cream

½ cup pesto sauce (store-bought or homemade)

1 teaspoon garlic powder

Salt and pepper, to taste

Grated Parmesan cheese, for serving (optional)

Fresh basil leaves, for garnish (optional)

Instructions
 

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season with salt, pepper, and garlic powder. Sauté for about 5-7 minutes until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the sliced bell peppers and zucchini. Sauté for about 3-4 minutes until they start to soften. Then, add the halved cherry tomatoes and cook for another 2 minutes until they begin to burst.

      Make It Creamy: Reduce the heat to medium-low. Return the cooked chicken to the skillet and stir in the spinach, heavy cream, and pesto sauce. Cook for an additional 3-5 minutes, stirring occasionally, until the spinach is wilted and everything is well combined. Adjust seasoning with more salt and pepper if needed.

        Serve: Remove from heat. Serve the creamy pesto chicken and veggie mixture in bowls, topped with grated Parmesan cheese and fresh basil leaves, if desired. Enjoy with crusty bread or over pasta for a complete meal!
