Creamy Pesto Pasta Salad

8 oz (225 g) rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup black olives, sliced

1/2 cup feta cheese, crumbled

1/2 cup freshly made or store-bought pesto

1/2 cup creamy dressing (such as ranch or Greek yogurt dressing)

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool the pasta down quickly and stop the cooking process.

    Prepare the Vegetables: While the pasta cooks, prepare the vegetables. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, and black olives. Set aside.

      Make the Dressing: In a separate bowl, mix together the pesto and creamy dressing until well combined. If you prefer a thinner consistency, you may add a little olive oil or a splash of water.

        Combine Ingredients: Once the pasta has cooled, add it to the bowl with the prepared vegetables. Pour the pesto dressing over the pasta and toss gently to ensure everything is evenly coated.

          Add Cheese & Season: Fold in the crumbled feta cheese and grated Parmesan. Season with salt and pepper to taste. Toss lightly again.

            Chill: Cover the salad and place it in the refrigerator for at least 30 minutes to allow the flavors to meld together.

              Serve & Garnish: Before serving, give the pasta salad a good stir. Garnish with fresh basil leaves for a beautiful presentation and added flavor.
