1 cup fresh ricotta cheese

2 cups fresh spinach leaves, washed and chopped

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon lemon zest

Salt and pepper, to taste

4 slices of crusty bread (such as sourdough or ciabatta)

1/4 cup grated Parmesan cheese

A pinch of red pepper flakes (optional)

Fresh basil or mint leaves for garnish

Sauté the Spinach: In a large skillet over medium heat, add the olive oil and minced garlic. Sauté for about 1 minute until fragrant.

    Add Spinach: Add the chopped spinach to the skillet. Cook for about 2-3 minutes until wilted. Season with salt and pepper to taste.

      Combine with Ricotta: In a mixing bowl, combine the sautéed spinach and the fresh ricotta cheese. Add lemon zest and mix until well blended and creamy. Adjust seasoning if necessary.

        Toast the Bread: While the spinach and ricotta mixture cools slightly, toast the slices of bread until golden brown, either in a toaster or on a grill pan.
