Ingredients

1 large head of cauliflower, cut into florets

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup cream cheese, softened

1/2 cup sour cream

1/2 cup grated Parmesan cheese

1/4 cup nutritional yeast (optional, for a cheesy flavor)

2 tablespoons fresh lemon juice

1 tablespoon fresh chives, finely chopped (for garnish)

1 tablespoon fresh parsley, finely chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Roast the Cauliflower: On a large baking sheet, toss the cauliflower florets with olive oil, garlic powder, onion powder, salt, and pepper. Spread them evenly and roast for 25-30 minutes, or until golden brown and tender, stirring halfway through.

Blend the Dip: Once the cauliflower is roasted, let it cool slightly. In a food processor, combine the roasted cauliflower, cream cheese, sour cream, Parmesan cheese, nutritional yeast (if using), and lemon juice. Blend until smooth and creamy.

Taste and Adjust: Taste the dip and adjust the seasoning with additional salt, pepper, or lemon juice if needed. Blend again for a few seconds until well mixed.

Serve: Transfer the dip to a serving bowl. Sprinkle with chopped chives and parsley for a fresh touch. Serve warm or at room temperature with pita chips, crackers, or fresh vegetables for dipping.

Store: If you have leftovers, store the dip in an airtight container in the refrigerator for up to 4 days.
