Creamy Roasted Corn Dip

4 cups fresh corn kernels (about 6-8 ears of corn)

1 tablespoon olive oil

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper, to taste

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded sharp cheddar cheese

½ cup finely chopped green onions (plus extra for garnish)

½ cup diced red bell pepper

2 tablespoons fresh cilantro, chopped (optional)

Tortilla chips or fresh vegetables, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Corn: In a large bowl, toss the fresh corn kernels with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Spread the mixture onto a baking sheet in an even layer and roast in the preheated oven for 20-25 minutes, or until the corn is golden and slightly charred. Stir halfway through for even roasting.

      Prepare the Dip Base: In a large mixing bowl, combine the softened cream cheese, sour cream, and shredded cheddar cheese. Use a hand mixer or spatula to blend the ingredients until smooth and creamy.

        Mix in Vegetables: Once the corn is roasted and slightly cooled, add it to the cream cheese mixture along with chopped green onions, diced red bell pepper, and fresh cilantro (if using). Gently fold the ingredients together until well combined.
