Creamy Spinach and Eggs

Ingredients
  

4 large eggs

2 cups fresh spinach, washed and chopped

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

2 tablespoons unsalted butter

2 cloves garlic, minced

1/4 teaspoon nutmeg

Salt and freshly ground black pepper, to taste

Optional: crusty bread, for serving

Sauté the Spinach: In a large skillet, melt 1 tablespoon of butter over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the chopped spinach and cook, stirring occasionally, until wilted, about 2-3 minutes. Season with salt and pepper. Remove the spinach from the skillet and set aside.

    Prepare the Creamy Sauce: In the same skillet, lower the heat to medium-low and add the remaining tablespoon of butter. Once melted, pour in the heavy cream and stir in the grated Parmesan cheese, mixing until smooth. Add in the nutmeg and season with a pinch of salt and black pepper. Let it simmer gently for 2-3 minutes until slightly thickened.

      Cook the Eggs: Create four small wells in the creamy sauce and crack an egg into each well. Cover the skillet with a lid and let the eggs cook for about 4-5 minutes, or until the whites are set but the yolks remain runny. Adjust cooking time for firmer yolks if desired.

        Combine: Once the eggs are cooked to your liking, add the wilted spinach back to the skillet, gently folding it into the creamy eggs. Cook for another minute to heat through.

          Serve: Use a spatula to carefully scoop out the creamy spinach and eggs onto plates. Drizzle with additional Parmesan if desired, and serve with crusty bread for dipping.
